How much should I pay for the services of an editor for my cookbook?

I am writing a cookbook and am using an experienced editor to help proofread and edit my copy in order to attempt to secure a publishing deal. And though I am contributing the majority of the content, this person will also be contributing a few short written pieces for inclusion in the book since she has a vast array of professional experiences in the realm of cooking upon which to draw. What is the range of fees for these types of service? And what sort of royalty percentage should I be looking to pay her on the back-end, if we are able to secure a publishing deal?
